LA POSADA DE LA VILLA

There were many inns around Plaza Mayor, Cavas and calle Toledo to lodge the merchants, workers and visitors that came to Madrid in stagecoaches and cars. Located on the site of what was the only wheat mill in Madrid, the Posada de la Villa was just one more inn offering food and accommodation at that time. As all the other inns in the area went to ruin, the Posada was no exception. Many of them, such as La Posada del Dragon and La Posada del León, did not survive, but the Posada, in a disastrous state, was rebuilt by Felix Colomo in 1981. With its roasting over, it specialises in traditional cuisine, such as Madrilenian cocido (meat and chickpea stew) cooked in ceramic pots over straw and holm oak ashes, and the roasted suckling lamb, prepared in ceramic pots in the old Arab oven.
